John Ross Jr to launch a special Smoked Salmon


John Ross Jr (Aberdeen) Ltd has been producing superior Scottish smoked Scottish salmon in the truly traditional way using red brick kilns that are over 150 years old, making it one of the last remaining producers using this technique. The superior Grade A Scottish salmon, which is reared in the cold clean waters of the Scottish coast, are naturally and uniquely cold smoked over oak and beech chippings. John Ross Jr's namesake (John Ross) was a chemist who created the method of producing Finnan Haddie – a smoked haddock created using a special smoking technique. This technique is still used today by the reformed company, John Ross Jr, which was founded by Andrew Leigh in 1987.

Many companies claim to produce smoked salmon 'traditionally', however this term is often used loosely and is often produced in purpose built steel kilns (laid flat) and even in oven-style kilns. John Ross Jr genuinely produces its product in the time-honoured fashion and the brick kilns are so rare they have been awarded 'listed' status by Historic Scotland. The fish is hand-filleted, dry salt cured, hung and then slowly smoked naturally for up to 24 hours. In 25 years, Andrew Leigh has grown the business internationally and John Ross Jr exports to 36 countries worldwide. It also supplies many well-known brands including Waitrose, John Lewis and Harrods, as well as many of the premium hotels and restaurants through the UK and overseas.

John Ross Jr will be launching a limited edition Coronation Festival Smoked Salmon, which will be made available for a limited period at Waitrose from mid-June until mid-August. It will be based on a traditional recipe dating back to the 18th century using rum and molasses to create a unique and distinct flavour. It will be launched in a specially designed pack relating to the Coronation Festival. They will also be unveiling their simulated kilns - replicas of the traditional brick kilns at the Aberdeen Smokehouse in order to give visitors a snapshot of the art of smoking. As well as this, they will also have live chef showcases by prominent UK chefs, who will be demonstrating how to use smoked salmon in a range of dishes.
